A bakery built around people
We started in a quiet corner that needed a reason to gather — and built the rest around honest food and a good crowd.

We respect what we cook, and how we make it
Every recipe starts with the same question: is this the most honest version of this dish we can make? That means organic, seasonal ingredients from local farmers’ markets, and sourdough milled with a partner in Cádiz rather than shipped in from a factory.
A kitchen led by women
Around 90% of our kitchen and floor team are women — roughly triple the industry average. It wasn’t a plan so much as a habit of hiring the best person for the job, and it shows in how the place runs.
Care for the neighbourhood
Retirees and service workers — teachers, healthcare staff, firefighters, police — get 50% off between 8 and 10 AM. It’s a small thing that means a lot over a coffee.
Less waste, more use
Bread scraps become cookies. Tomato ends become pizza sauce. We work with Too Good To Go and donate what’s left over at the end of the day. Solar panels and AC-condensation recycling cover a meaningful share of our energy and water use, and we grow some of our own microgreens and herbs on-site.
