Spelt (Triticum spelta) is an ancient wheat variety grown for thousands of years. Compared to modern wheat, spelt is valued for its richer nutritional profile and deeper flavor.

How We Bake Our Spelt Seeded Sourdough
1. Living Sourdough Starter
We create our starter by fermenting local grapes with whole-grain spelt flour.
It’s refreshed daily and slowly develops strength, aroma, and character.
2. Hand Mixing
Organic spelt flour, sea salt, our living starter, and the full seed mix are gently combined to preserve nutrients and structure.
3. Pre-Fermentation
The dough rests and begins fermentation, allowing flavors to develop naturally. Each loaf is shaped by hand.
4. Long Cold Fermentation
An overnight rest in the refrigerator allows:
Better digestibility
Deeper flavor
Improved texture
5. Morning Stone Baking
At dawn, the bread bakes on hot stones with added steam, creating a crisp crust and aromatic crumb.
